HCS culinary students earn state recognition; headed for national competition

Students in the Culinary and Hospitality Academy housed at Phoebus High School recently earned recognition in the Prostart Culinary competition, as well as the HUNCH competition.

The Virginia ProStart Student Invitational was held on March 8, 2019, in Glen Allen, VA. The invitational is composed of two distinct competitions - management and culinary - that showcase the most important skills needed on both sides of the restaurant and food service industry - front-of-the-house and behind-the-scenes in the kitchen.

The Culinary Competition highlights the creative abilities of teams through the preparation of a three-course meal in just 60 minutes, using only two butane burners with no access to running water or electricity. There’s no room for error as teams are evaluated on taste, skill, teamwork, safety, and sanitation.

Phoebus’ students earned second place in the Culinary Competition and $30,000 in scholarship money with their menu of pan seared scallops, pan fried Chesapeake Bay striped bass, and bittersweet lemon mousse. Team members included Amarianna Thomas, Soul Stegall, Jesse Schoell, Iyana Miller and Wesleigh Gomes.

The Management Competition asks teams to develop a proposal for the next hot restaurant concept and present it to a panel of industry judges. The teams ability to think on their feet is also tested as they quickly solve challenges that managers face on a daily basis.

PHS’s Management Team also placed second in this competition and earned $30,000 in scholarship money. Team members were Rain Stegall, Daysi Hal, Sierra Warren, and Tiffini Champion.

The NASA HUNCH Culinary Challenge is a competition that is open to culinary programs to develop food items for the astronauts aboard the International Space Station.  Each year a theme is provided to the schools and students create new dishes taking into account food processing procedure and nutritional requirements so that their items meet the standards of the NASA Johnson Space Center Food Lab.

The Phoebus HUNCH team participated in the Preliminary Culinary Challenge on February 25, at NASA Langley Research Center, and are now headed to the national competition in Houston, TX on April 15. The six member team - Daysi Hale, Mya Brooks, Iyana Miller, Amarianna Thomas, Wesleigh Gomes, and Terra Tucker will present their side dish made from diced butternut squash, parsnips, fennel, sweet potato, parmesan cheese, and pancetta.
